Nanaimo Bars for the Healthy
The Nanaimo bar is a dessert of Canadian origin popular across North America. The Nanaimo bar is a bar cookie which requires no baking, and is named after the West-Coast city of Nanaimo, British Columbia. Since the classic Nanaimo Bar can pretty much give you a heart attack after two pieces due to it’s creamy sugary ingredients, I decided to try a little experiment (thanks to Sarah Britton’s inspirational healthy food ideas).

Base: The Raw Brownie
Filling (Blend in a food processor on high until very smooth):
1 ½ cups raw cashews, soaked for at least 5 hours, overnight is best
juice of 2 lemons
the seeds of 1 whole vanilla bean (or 1 tsp. alcohol-free vanilla extract)
1/3 cup raw coconut oil, melted
1/3 cup raw honey (solid or liquid.)(Vegans use agave nectar.)
1 cup raspberries (thaw completely if using frozen)
