A BBQ Summer Salad to Melt in Your Mouth
Do you think if we all share our favourite summer recipes that we might be able to coax summer to join us a little faster? I know this Ontario spring rain is good for my lawn, but I would also like to start developing the summer glow on my skin….
Since I can’t seem to go more than a few days without craving this yummy salad that I accidentally made one night, I thought I might share it with you. I’m sure it is nothing new so I’m not claiming to have made some new discovery, but if you have never tried a version of it, I would certainly suggest you give it a try.
You will need:
baby greens and arugula;
a quarter of a red onion:
a quarter of the coloured pepper of your choice;
a little under half a clove of garlic;
about three tbsp of goat’s cheese;
some olive oil and some balsamic vinegar.
Wrap your veg and garlic in separate tinfoil groups and roast on the BBQ until soft
Mush the garlic in a small container and add some olive oil and balsamic vinegar to make a dressing
Mix baby greens with arugula (I mix half and half because I love arugula but you can do things the way you prefer) – and place chunks of goats cheese on top of the salad.
Pour your dressing and the warm veg on the top of the salad
Place the salad complete on the BBQ for a little over a minute to allow the goats cheese to melt
Remove the salad from the BBQ and mix everything into a yummy salad
